Peanut butter cookies were requested earlier this week, so I made them. This recipe is *almost* identical to the previously posted peanut butter cookie recipe, but it has some extra baking soda and a bit more flour (maybe). I'm going to go ahead and claim that the difference is enough to justify another recipe post!
Also, pretend that this was posted on Tuesday. It will probably be Sunday by the time I have this up. My week has been crazy and I haven't had much time to work on this. I had the pictures all edited and ready to go, but I never got around to typing this up. So here is a lazily typed up recipe. Good luck.
PB Cookies (Printer friendly PDF version)
1 C shortening
1 C white sugar
1 C brown sugar
1 C peanut butter
2 eggs
3 C sifted flour
2 t baking soda
1 t vanilla
Put the shortening, sugars, peanut butter, and eggs into a mixing bowl. Make it creaming and homogenous-ish.
Add the vanilla, baking soda, and flour. Stir it up. Make sure you scrape the bowl or you might have dry crumblies at the bottom of the bowl. Those don't make good cookies. I wasted some dough.... sigh.
Form the dough into balls with your hands. Place on a lightly greased cookie sheet. Press a criss-cross shape into them with a floured fork.
Bake at 350 degrees Fahrenheit for 10 to 12 minutes, depending on the size of the dough disks.
Let cool on the cookie sheet for a minute and then remove the cookies to a cooling rack.
Eat lots of cookies.
